Bright Farms Winter Root Salad Recipe
Ingredients
  • 4 oz. BrightFarms® Sunny Crunch® 
  • 2 large red beets 
  • 2 large golden beets 
  • 2 watermelon radishes, washed and peeled 
  • Handful of sunflower seeds 
  • Optional: ¼ cup Goat Cheese 
Honey Dijon Vinaigrette 
  • 1 tbsp shallots, minced 
  • 2 tbsp Dijon mustard 
  • 2 tbsp honey 
  • 2 tbsp red wine vinegar 
  • ¼ cup olive oil 
  • salt & pepper to taste 
Recipe Preparation
  1. Add BrightFarms® Sunny Crunch® to a large salad bowl.  
  2. Peel and slice yellow and red beets and watermelon radishes.   
  3. Arrange beets and radishes over the lettuce.  
  4. In a mason jar, mix together the vinaigrette ingredients and shake to combine.  
  5. Drizzle the dressing over the salad before serving.  
  6. Garnish with sunflower seeds. 

Mix it up with any other root vegetables you have on hand such as sweet potatoes or regular potatoes. Sub maple syrup for honey to make this salad vegan.
