Ingredients
4oz BrightFarms ® Spring Mix
2 cups purple cabbage, chopped
1 red onion, finely chopped
1/2 cup roasted pecans
1 cup dried black lentils
Miso Sesame Vinaigrette
3 Tbsp avocado oil
1.5 Tbsp rice vinegar
2 tsp white miso
Dash of sesame oil
½ tsp soy sauce
Optional: ½ tsp sweetener of choice (honey, maple syrup, agave)
Recipe preparation
Bring a small pot of water to a boil. Add lentils. Reduce to simmer and cook for about 20 minutes until lentils are al dente. Allow to cool.
In the meantime, prep toppings. Chop cabbage into bite sized pieces. Dice red onion into small pieces. Roughly chop pecans.
Combine ingredients in a bowl and whisk until combined.
Place Spring Mix in a large salad bowl. Top with toppings. Drizzle with salad dressing to taste. Serve!
