Bright Farms Greek Salad Platter Recipe
Ingredients
  • 8oz BrightFarms® Sunny Crunch® 
  • 5oz cherry tomatoes, halved 
  • 4 small cucumbers, diced 
  • 1 small red onion, diced 
  • 1 orange bell pepper, diced 
  • 5 oz feta cheese, diced 
  • 6 oz Kalamata olives 
  • 1 tbsp fresh parsley, minced 
Greek Vinaigrette 
  • ½ cup extra virgin olive oil 
  • 1 lemon, juiced 
  • 1  ½ tsp fresh oregano, chopped 
  • Optional: 1 clove of garlic, minced 
  • Salt & pepper to taste 
Recipe Preparation
  1. On a large platter, arrange your greens on the bottom to form a base. 
  2. Prepare all the topping ingredients, paying special attention to chop each vegetable to be uniform in size to one another. 
  3. Arrange each ingredient into a single vertical column on top of the greens. For example, place the tomatoes in one column, followed by the cucumbers, and so on.  
  4. In a mixing bowl, add dressing ingredients and whisk vigorously until combined. Drizzle over platter and serve separately in a decorative bowl. 
  5. Garnish with fresh parsley and serve!
