Ingredients
- 8 oz. BrightFarms® Sunny Crunch®
- 2 ears corn or 1.5 cups
- 1 pint cherry tomatoes
- 1 avocado, diced to bite-size
- 1/8 cups red onion, thinly sliced
Cilantro Lime Dressing
- 2 tbsp fresh lime juice
- 2 tbsp olive oil
- 1 tbsp fresh cilantro, chopped
- Pinch of cumin
- Salt & pepper to taste
Optional: 1/3 teaspoon red chili flakes
Recipe preparation
- Combine corn, avocado, tomatoes, and red onion in a large salad bowl.
- In a large bowl, add the dressing ingredients.
- Whisk to combine.
- Pour over the salad and toss to mix.
