Ingredients
- 4 oz. BrightFarms® Sunny Crunch®
- 1 cup oranges, cut into small segments
- 1 cup croutons, homemade preferred
- ½ cup pecans, caramelized or roasted
- ¼ cup pepitas
Lavendar Citrus Vinaigrette
- ½ cup extra virgin olive oil
- 1 Tbsp red onion, finely chopped
- 1 tsp dried lavender
- 5 Tbsp orange juice
- Salt & pepper to taste
Recipe preparation
- In a mason jar, add olive oil, onion and lavender. Shake vigorously to combine and let stand for 15-20 minutes to infuse. Ideally let sit overnight.
- Add salad greens to a large salad bowl. Top with orange segments, croutons, pecans and pepitas.
- Add orange juice to dressing jar and shake well. Drizzle over salad. Toss and serve!
Special Instructions
If you have the time, try baking your own croutons and roasting your own pecans! For croutons, cut stale bread into cubes. Toss with olive oil and spices of your choosing and bake at 375 for 15-20 minutes, tossing to get an even toasty exterior. For Pecans, toss with olive oil or drizzle maple syrup and bake at same time and temperature for 10 minutes.
