Ingredients
- 8 oz. BrightFarms® Baby Spinach
- 2 cups of fresh watermelon, cut into bite sized chunks
- ½ cup of feta cheese
- 1 cup of red onions, thinly sliced
White Balsamic Vinaigrette
- 3 tbsp of extra-virgin olive oil
- 2 tbsp of white balsamic vinaigrette
- Salt & pepper to taste
Optional: Pine nuts and fresh mint to garnish
Recipe preparation
- Add spinach to a salad bowl.
- Prep watermelon and onions and add to bowl.
- Add all vinaigrette ingredients into a mason jar and shake well.
- Pour dressing over salad, toss and serve!
Special Instructions
Sub avocado for feta cheese to make this salad vegan.
